How To Make Pempek Palembang (With Video)

Pempek Palembang is one of the foods typical from Palembang Indonesia, this food is made by fish and sago. Pempek is eaten together with cuka or cuko. Cuko is made from brown sugar,  vinegar, chili pepper, garlic, salt  and water.
There are many variety of pempek; such Pempek lenggang, Pempek adaan, Pempek keriting, and Pempek panggang. A good pempek palembang is soft and custard-like, golden yellow and best eaten while still hot from the skillet. Here's step by step on how to make pempek palembang that you can make at home

Ingredients :
  • 1 kgs fish of Spanish mackerel
  • 3 eggs
  • Little salt
  • ½ kgs of sago powder
  • Salt adequate
  • 1 small cup of Water

Step By Step to make Pempek Palembang:
  1. Mashed the fish meat of mackerel and sago flour the mix until smooth,
  2. add the salt then stirred, add water little by little
  3. After mixed then make elongated without stretching the field
  4. prepare half a pot of water then boiled.
  5. If the dough of pempek has been formed, enter the dough was formed into boiling water until cooked.
  6. If Pempek in boiling water has swell, lift and drain.
  7. Prepare the pan and add oil
  8. fry pempek until pempek slightly brown color

Ingredients to make Cuka Pempek Palembang  : 
  • 250 grams brown Sugar 
  • Dried shrimp, mashed
  • 2 cups of water.
  • 1 seed of tamarind
  • red pepper
  • 1 clove of Garlic
  • Salt
  • 1 tsp of the radish mashed
  • Tongcai

Step by step to make Cuka :
  1. First, Boiled brown sugar until boiling, then enter the tamarind.
  2. After mixed, turn off the fire and filtered the water until separate from dregs of brown sugar.
  3. Mashed the chili, garlic, salt,  and tongcai
  4. Add water of brown sugar with dried shrimp mashed, and radish mashed and then mix.
  5. Serve dark sauce/cuko with pempek that was fried.
